      How to choose a red wine from Provence?

      Characteristics of the Côtes de Provence red appellation:

      Red Provence wine offers a range of colors and varied aromas. With a deep garnet color with mauve highlights, the nose is elegant, distinctive, fine and complex, then often reveals animal notes, venison, but also leather. On the palate, red Provence wine can be as much about lightness as it is about power.

      What makes a red wine great?

      Several criteria come into play, from the fermentation process during which the grape skins are in contact with the juice, to the maturity of the wine, whether in vats, barrels or bottles. It is this combination, as well as the quality of the grapes at the start, which brings red Provence wine to its peak.

      Rosé wine from Provence?

      Characteristics of the Côtes de Provence rosé appellation

      Provence rosé wines present a range of varied hues, ranging from rose petal to deep salmon. The nose offers notes of red fruits, redcurrant, raspberry, as well as black fruits, blackcurrant and blackberry. They offer a variety of spicy aromas, thyme and garrigue, vegetal notes of anise and fennel as well as mineral notes.

      How to choose a Côtes de Provence rosé?

      As an aperitif, choose fruity, low-tannin rosé wines. To accompany the meal, select more powerful rosé wines to match the meats and dishes. For dessert, turn to lightly sweet Côtes de Provence rosé wines .

      White wine from Provence?

      Characteristics of the Côtes de Provence white appellation

      White Provence wines are subtle and fine. Of a beautiful pale yellow color with greenish reflections, their colors are limpid and brilliant. The nose is refreshing and invigorating, it offers citrus notes such as grapefruit and lemon, notes of pine bark, thyme as well as small spicy touches.

      How to choose a white Côtes de Provence?

      With bright, light whites, choose low-fat dishes. They combine with iodized flavors such as shellfish, crustaceans, grilled, raw or smoked fish.

      Dry and intense white wines, woody or not, make great pairings with dishes of the same intensity: white meats in cream sauce, fine or fatty fish, high-end seafood or even powerful cheeses.

      How to taste a wine from Provence?

      The art of tasting Provence wines.

      Tasting is a pleasure. Appreciate color, clarity and shine. Smell the primary aromas, which come from the grape itself, and the secondary aromas provided by fermentation and the vinification method. First smell the wine at rest to detect its more discreet aromas, then shake the glass in a circular motion to release the stronger aromas. Then, swirl it around in the mouth to let the sweetness appear first, which in principle disappears quite quickly, then comes the salty (rare in wines), the acid and the bitter, which are more persistent.

      When to drink Provence wine?

      In wines, there are four types of expression for oenologists: body, mind, soul and heart, and this is perhaps even more true for the wine of Provence. If it is full-bodied, we will rather talk about a wine which corresponds to a weekend around a nice table with friends, we will look for intensity. For an aperitif or a party, choose a wine with spirit, lightness and liveliness. In the case of a family or romantic meal, the choice will be a hearty, warm and generous wine. Finally, for a refined moment, a rare occasion, we will choose a soulful wine, rich, complex and mature.
