Winemaking

Emblem of the Saint-Roux farm, Le Pigeonnier is the organic but modern variation of Provence rosé. The beautiful palette of grape varieties offers it a beautiful regularity and consistency, vintage after vintage. Its intense freshness of color and nose is obtained thanks to the patient work of night harvesting then long cold storage to optimize the contribution of the lees. Then, after harvest, the juices are heated for fermentation between 14 and 18°C, in order to preserve the diversity of aromatic extractions. Aging for a few months on fine lees followed by bottling at the end of the winter period.
