Custody advice

Optimal tasting temperature at 12°C but serve cooler in summer.
Tip: Put your rosé in an ice bucket with water and ice cubes for optimal tasting.

Winemaking

The Esprit de Berne cuvée, as its name suggests, takes up the codes and style of the Berne house, in a lighter and fruitier interpretation, specific to aperitif and evening wines. The plots are called according to maturity checks, at the time of the night harvest, then the grapes are carefully sorted and cooled quickly to around 10 degrees C to allow short but optimal maceration in the press, without too much diffusion of color. Maceration on lees of part of the vats will serve as an aromatic reserve in the final blend. Close settling does not eliminate all of the lees, necessary for ideal fermentation, around 14 and 16 degrees C. Aging on fine lees completes the vinification work, before bottling at the end of winter and the spring, to preserve freshness.
