Wine and food pairing

Château Saint-Roux is not just an aperitif wine. Its complexity and structure make it a wine for tasting. It will enhance a goat cheese platter or typical dishes from the South such as a filet of beef in a crust with local mushrooms such as a filet of beef in a crust with mushrooms

Optimal tasting temperature at 10°C.
Tip: Put your rosé in an ice bucket with water and ice cubes for optimal tasting.

Winemaking

This vintage is firstly the signature of a unique terroir, with red and ocher soils, between limestone and particularly crystalline Provence. Harvested at night, the grapes are quickly transported to the cellar, then cooled, as for the juices, for a long stabilization on their lees for several weeks. The settled musts are reheated then inoculated with native yeasts, leading to a fermentation lasting several weeks. Aging is carried out in stainless steel vats and concrete eggs, on fine lees.
