Custody advice

Ideal tasting temperature at 10°C.
Tip: rather than putting your rosé in the freezer, put your rosé in an ice bucket with water and ice cubes.

Winemaking

The UP Origin vintage returns to the roots of the magnificent terroir that gave birth to Ultimate Provence. At the foot of the Maures massif, the vineyard grows on crystalline soils where we find schist in particular. The Syrah and Rolle grape varieties are of course in the spotlight here, accompanied by the younger Grenache noir and Cinsault from the bastide. Always harvested in the middle of the night, in the light of our lunar star, the grapes are quickly pressed in the cellar, then the juices separated. The saline minerality is expressed quite well without long maceration. A short stabilization is followed by the filtration of the lees which will be reincorporated to ferment together, around 17-18°C. Frequent stirring on fine lees for two months refines the palate, before the winter rest. Setting takes place in the spring.
