Winemaking

Saint-Roux experiments with several grape varieties in the Mediterranean and delivers here a vintage with mixed origins. The blend of grape varieties gives originality and intensity. Carefully worked, the grapes are harvested at night when they are just ripe, without excess, to preserve their freshness. Gentle pressing and good settling refine the silhouette of the wine. Slow fermentation at controlled temperatures, with a mix of native or selected yeasts, ensures aromatic diversity. Aging for a few months on fine lees perfects the balance on the palate.
