Ultimate is the emblematic cuvée of an absolutely contemporary Provence. Here, the Rolle grape gives off citrus aromas, particularly of Menton lemon, enhanced by floral notes and white pepper. Its golden yellow colour, with hints of both green and copper, is the result of a short maceration in the press and selection of the best juices from the plots, followed by maturation on lees to enrich the bouquet and mouthfeel. Fermentation takes place at around 16-18°C, in different types of vat. Reduced ageing on the lees precedes final blending before bottling.
