Winemaking

This vintage is a tribute to the centuries-old tradition of olive tree cultivation in Provence, and particularly in the territory of Lorgues. It is the first vintage available in organic form, but very much in tune with the times; Its pale color and fruity nose are worked as for great contemporary rosés, thanks to a night harvest, a selection of grape varieties and first juices and fermentation at a regulated temperature between 16 and 18°C. Cold aging on its fine lees perfects the palate, which remains fine and fluid.
