Nose

Very lively, intense and expressive with notes of stone fruits, citrus, exotic fruits and light spicy notes

Palate

Lively attack with lots of roundness, elegantly fleshy structured wine, complex with fruit aromas (vine peaches). Floral finish, very long and round, with slight bitterness. Clean palate then round, light finish. Body for perfect balance.

Wine and food pairing

Graceful alliance accompanied by grilled red mullet, an octopus salad, a niçoise-style vegetable tian, thorny artichokes with basil and penne with grated bottarga and olive oil.


Custody advice

Ideal tasting temperature at 12°C but served cooler in summer.
Tip: rather than putting your rosé in the freezer, put your rosé in an ice bucket with water and ice cubes.

Winemaking

Le Château is the quintessence of the estate's elegant, flavoursome rosé. Priority is given to fruity expression and freshness on the palate. The grapes are harvested at night and sorted, then pressed directly (maceration for a few hours depending on the plot), allowing the finest juices to be selected (first presses and hearts of presses). Careful settling, reincorporation of filtered lees, and fermentation at between 14 and 18°C for greater aromatic complexity in the final blend. Aged on fine lees in vats with regular stirring of the lees.
