Château Saint-Roux is not just an aperitif wine. Its structure and complexity make it a wine for tasting. It will enhance local Provençal dishes such as a beef filet in a mushroom crust or a goat cheese platter.


Custody advice

Optimal tasting temperature at 12°C but serve cooler in summer.
Tip: Put your rosé in an ice bucket with water and ice cubes for optimal tasting.

Winemaking

This vintage is firstly the signature of a unique terroir, with ocher and red soils, on the border between crystalline and limestone Provence. Harvested at night, the grapes are immediately transported to the cellar, then cooled, as for the juices, for extensive storage on their lees for several weeks. Heating of the settled musts then inoculation with native yeasts, for fermentation lasting several weeks. The aging is carried out in stainless steel vats and in concrete eggs, on fine lees.
