      With its avant-garde concept halfway between an exceptional wine property and a boutique hotel with a chic and contemporary design , Ultimate Provence is one of those places that does not leave you indifferent. At the gates of Saint-Tropez, the address offers a different way of experiencing Provence, with an offbeat score that awakens the senses and disrupts the codes of this region with its strong traditions.
      33 carefully decorated rooms, the eUPhoria restaurant boldly managed by chef Romain Franceschi and the UP Lounge wine and cocktail bar make up a unique experience appreciated by aesthetes.
      Located in the legendary Var hinterland streaked with vines and dotted with olive trees, Ultimate Provence reinvents the Provençal art of living around a triptych: a resolutely contemporary architectural bias, a magnificent vineyard , and a relaxed chic atmosphere .
      On the design side, architects Emil Humbert and Christophe Poyet have created a cosmopolitan and welcoming interior design with a slight urban touch, thus creating a balanced contrast with the traditional heritage of the winery.
      Located in a wild and mineral environment, on the edge of the Maures Nature Reserve and the Natura 2000 zone, the Ultimate Provence terroir covers 46 hectares of vines, entirely in AOP Côtes-de-Provence. Labeled organic farming since February 2021, the land is also HVE 3 certified. High Environmental Value is official recognition of the environmental performance of winegrowers and farmers. The HVE is based on environmental performance indicators which cover the entire operation.

      What is an AOP Côtes de Provence wine?


      It was in 1977 that the AOP Côtes de Provence was created. Today, more than 20,000 hectares of vines are cultivated to produce almost 90% of rosé wine.
      At the origin of AOP Côtes de Provence wines, a very wide range of grape varieties, hand-picked: Grenache, Cinsault, Tibouren, Mourvèdre, Syrah or Cabernet Sauvignon contribute to the production of fresh, fruity, aromatic and elegant, typical of the appellation.
      In order to harmonize national protection systems for appellations, the European Union adopts the AOP label. This is a transposition at European level of the designations of controlled origin issued by EU member states.

      What are the characteristics of Ultimate Provence wines?


      Ultimate Provence offers four vintages in the Côtes-deProvence appellation: UP Rosé, UP Rouge, UP Blanc and UP Origin rosé. The iconic UP Rosé vintage is available in four formats: 75 cl, 150 cl (Magnum), 300cl ( Jéroboam ) and 600cl (Methuselah). The style of the bottles reflects the unique DNA of the vineyard: a refined, original and modern design enhances the wines. Transparent and without labels, the precious bottles of the Ultimate Provence vintages are adorned with elegant striated reliefs which reveal the property's logo.
      Thanks to its vintages, the quirky Provencal art of living imagined by UP I Ultimate Provence shines in the most beautiful places on the globe. Its wines can be tasted in Beach Restaurants in Ibiza, such as Blue Marlin, Ushuaia Hotel and Coco Beach; the Stefano in Saint-Tropez; the Nuit Blanche evenings at the Beau Rivage Beach in Nice... as well as prestigious places, such as the famous Jacky'O in Mykonos, the Nikki Beach Dubai, the Mondrian Hotel, the Raffles, Opium, St Martins Lane and Toy Room hotels in London.

      What are the best possible food and wine pairings with Ultimate Provence wines?


      The wines occupy a place of honor: the Chef likes to create contrasting pairings to enhance the UP vintages. The experience is gourmet, uninhibited, like this atypical vineyard which is not afraid to be offbeat with an offering designed in a modern bistro style.
      On the menu, a pork fillet and celery root accompanied by beetroot poached in UP Rouge wine inspired by the Chef's Corsican culture or a lobster with verbena, burratina, tomatoes flavored with orange blossom. The flavors seduce and surprise, with their extreme freshness as their common denominator.
      The UP rosé wine will enhance daring fusion cuisine and enhance some prawns sautéed with basil with its aromas.
      UP Blanc wine can be served as an aperitif but it will also go perfectly with oysters or sea urchins.
