      Château Saint Roux and its organic wine estate.


      Château Saint-Roux takes place in Cannet-des-Maures, the estate has survived the ages with panache and recovered from the trials that have littered its hundreds of years of existence. Perhaps first of all thanks to the successive owners whose reputation for generosity towards the local population has earned the Château the title of Saint.
      In 2018, a restoration in the purest Provençal style restored the entire vineyard and its buildings to their former glory, thanks to respect for local materials and original stones.
      Today, choosing a stay at Château Saint Roux is not trivial: it is experiencing the Provençal terroir in its most authentic expression. Here, we get a taste of real “slow life” through a multitude of educational and eco-responsible activities.
      The vinification of Château Saint-Roux wines is carried out with indigenous yeasts , called “terroir”, which intensify the complexity of the aromas and give the wines an extra soul and a unique signature. The tests carried out on the grapes made it possible to select five certified original Saint-Roux yeasts which are used in the blending of the estate's wines.

      What is organic wine?


      An organic wine is a wine whose grapes have been grown using phytosanitary means and products of plant, animal or mineral origin. It comes from organic viticulture and in most cases has the AB label.

      What are the characteristics of Château Saint-Roux organic wines?


      On crystalline and limestone soil, its lands give life to wines with complex aromas, cradled by the Provençal Mediterranean climate. Rich in iron and bauxite, essential nutrients, the estate's grapes create deep and unique wines, in perfect symbiosis with the olive trees that coexist on the plots.
      Château Saint-Roux offers a beautiful range of emblematic grape varieties of Provence: Côtes-de-Provence (Grenache, Syrah, Cinsault, Rolle, Mourvèdre) but also Viognier (Côtes du Rhône), Marselan (cross between Cabernet Sauvignon and Grenache ) Colombard, Merlot, Nielluccio (Corsica) more rustic and atypical.
      At the heart of a windy corridor, the Château Saint-Roux vines are naturally protected from diseases, an asset for organic farming. The 40 hectare vineyard is now worked by hand, with 98% of the harvest carried out manually and at night. The vinification of the wines is carried out using natural and local yeasts, which mark the unique and authentic character of Château Saint-Roux wines.

      What are the differences between organic wine and conventional wine?


      The difference between organic wine and conventional wine lies above all in the method of cultivation. Indeed, the first focuses on 100% organic agriculture. An approach that completely excludes insecticides and pesticides, whether in the winery or in the vineyards. It thus implies good control on the part of the organic winegrower.
      For conventional wine, the cultivation method involves all means aimed at the good health of the vine. Among them are chemicals intended to eliminate harmful insects and bad bacteria. However, winegrowers must stick to tools and products that comply with current legislation.

      What are the best possible food and wine pairings with the organic wines of Château Saint-Roux?


      The rosé wines of Château Saint-Roux can be enjoyed as an aperitif but also go perfectly with prawns, grilled fish or even local meat dishes.
      The red wines of Château Saint-Roux will enhance cooked meats or even a cheese platter.
      For white wines, they will form a perfect pairing with grilled sea bass with fennel or as an aperitif.
