Winemaking

An emblematic cuvée of an absolutely modern rosé Provence, Ultimate is composed of grape varieties which exalt the fruity, floral nuances accentuated with more spicy touches, particularly with the Rolle and Syrah grape varieties. Its light color with coppery and sometimes silvery reflections is the result of unique know-how implemented in the selection of the most beautiful juices from the plots, but more at the press, then from stabilization on lees, to garnish the bouquet and the mouth. Fermentation is maintained around 16-18°C. Reductive aging, on lees, precedes the last blending before bottling.
