Custody advice

Optimal tasting temperature at 10°C.
Tip: Put your rosé in an ice bucket with water and ice cubes for optimal tasting.

Winemaking

The UP Origin vintage takes its sources from the majestic terroir that gave life to Ultimate Provence. On the outskirts of the Maures massif, the vineyard is planted on crystalline soils where we mainly encounter schist. The Syrah and Rolle grape varieties remain the kings, followed by the more recent Grenache noir and Cinsault from the bastide. Only picked in the middle of the night, by the light of the moon, the grapes are quickly pressed in the cellar, then the juices separated. The saline minerality is quite well highlighted without long maceration. A brief stabilization precedes the filtration of the lees which will be reincorporated to ferment everything, around 17-18°C. Two months of regular stirring on fine lees refine the palate, before the winter break. Setting takes place in the spring.
