Winemaking

This new creation by MDCV is a tribute to Provence. From the selection of plots and the choice of harvest dates at night, to the blending of grape varieties and the careful packaging in a protective atmosphere, everything is done to capture the spirit and fragrance of Provence. The preservation of colour and delicate fruity aromas is made possible by the use of neutral gases such as nitrogen, the maintenance of musts and wines at cool, controlled temperatures, and above all the careful stirring of the wines on the fine lees, which gives the wine its delicious taste on the palate.
