Nose

Nose of apricot, almond, medlar and barley

Palate

Fresh, then smooth attack, consistent mid-palate, then a long finish with a chalky texture. Retro-olfaction echoes the aromas perceived on the nose.

Wine and food pairing

Raw langoustines seasoned with a dash of sesame oil, roast veal accompanied by smoked cauliflower mousseline and yuzu gel.

Custody advice

Ideal tasting temperature at 12°C but served cooler in summer.
Tip: rather than putting your rosé in the freezer, put your rosé in an ice bucket with water and ice cubes.

Winemaking

Meticulous settling, reincorporation of filtered lees, then slow fermentation between 14 and 18°C. The wine is aged in sandstone amphorae, a container with millimetre-level porosity that preserves the integrity of the fruit while emphasising the fine, chalky texture on the palate. Light bâtonnage on fine lees accompanies the wine during its long maturation.
