Very expressive, lively and intense with notes of citrus, stone fruit, exotic fruit and light spicy notes

Palate

Frank attack with lots of roundness, elegantly structured fleshy wine, complex with fruity aromas (vine peaches). Round, floral and very long finish, fine bitterness. Frank then round mouth, light finish. Body for good balance.

Wine and food pairing

Harmonious pairing with grilled red mullet, a niçoise-style vegetable tian, an octopus and spiny artichoke salad with basil, penne with grated bottarga in olive oil

Custody advice

Ideal tasting temperature at 10°C.
Tip: rather than putting your rosé in the freezer, put your rosé in an ice bucket with water and ice cubes.

Winemaking

The Grande Cuvée is an uncompromising cuvée, born from the desire to savor the oldest Grenache noir vines, on the Plateau plot in Bern, around the old oak. The Grenache noir / limestone terroir pairing works wonderfully, and the vinification only consists of letting the intensity, freshness and above all the almost chalky grain on the palate, so characteristic of the wines of the place, express themselves. The harvest is decided when the balance between fruitiness and acidity is found, it takes place at night and the grapes are transported quickly to the cellar. Maceration takes place in the closed press for a few hours, to promote exchanges between must and skins, without too much fear of diffusing a little color, which does not harm the quality. Stabilization on lees for two weeks, with daily stirring, promotes the release of aromatic precursors from the grapes, while providing the mouth with incomparable richness. Fermentation takes place in vats for part, in oak and acacia barrels for another, with aging on fine lees for 5 months. The result is obtained by the final reassembly of the vat wines and the wood wines, without the woody notes ever weighing down the bouquet or the palate. On the contrary, this original breeding provides discreet tannins which underline the structure of Grenache on the palate, while ensuring good aging potential.
