Wine and food pairing

Its fruitiness makes it an aperitif wine. It can also accompany a nice table around noble fish such as grilled sea bass (sea bass) with fennel.

Custody advice

Ideal tasting temperature between 10° and 12°C.
Tip: rather than putting your white in the freezer, put your white in an ice bucket with water and ice cubes.

Winemaking

Pigeonnier de la ferme Saint-Roux is the organic but modern version of the Provençal white. The range of grape varieties used gives it a certain consistency, vintage after vintage. Its freshness on the nose and palate is due to patient harvesting at night, followed by a long period of cold storage to maximise the contribution of the must. Finally, after harvesting, the juices are heated to between 14 and 18°C for fermentation, to encourage a variety of aromatic expressions. The wine is matured for several months on fine lees before bottling at the end of winter.
