Wine and food pairing

Graceful alliance accompanied by grilled red mullet, an octopus salad, a niçoise-style vegetable tian, thorny artichokes with basil and penne with grated bottarga and olive oil.

Custody advice

Ideal tasting temperature at 16°C

Winemaking

A harvest in early October mornings with sorting of the grapes, allows to start the maceration in vat and cold, then the fermentations are conducted between 18 and 28°C, with small frequent pumping over, completed by one or two partial delestages. An extended vatting over 5 weeks allows to start the coating of the firmer structure of the Cabernets. Long aging in vats and partially in barrels, on fine lees. Wine filtered at the start then left to rest for a few months before marketing.
