Winemaking

Le Pigeonnier from the Saint-Roux farm is the organic but modern rosé cuvée from Provence. The wide range of grape varieties gives it a certain consistency and regularity, from vintage to vintage. Marked by a freshness of color and nose which is due to the patient work of night harvesting then long stabilization at low temperature to encourage the addition of lees. Finally, following the harvest, the juices are reheated to ferment between 14 and 18°C, to optimize the variety of aromatic reflections. Aging for several months on fine lees precedes bottling at the end of the winter break.
